These crisp flats are made from locally grown organic Einkorn grain that is milled by me and used to make these crisp flats. They are so good. They are light, crispy, and wholesome. Einkorn is a special grain and I'm so excited to be able to offer these.
Einkorn means "one kernal" in German. It is an ancient wheat variety that has not been hybridized and has been the same for 10,000 years. Pretty wild! Einkorn has 30% more protein and 30% less starch than modern wheat. It's well tolerated by people with gluten sensitivity.
