My Story
My name is Lauren and I started baking with sourdough 15 years ago when my kids were little. It started with making sourdough crepes, then expanded to muffins, cookies, and bread. I decided to open a small bakery to share what I make with my community. I bake out of a commercial kitchen on College Hill in Easton, PA and am licensed. It's just me. I love what I do, but, dang. I hate all the dishes!
Many ask if I'm vegan since everything I make for Wild Doe is vegan. My answer to that is a bit longer. I am not vegan. But, I'm sensitive to people who have dietary restrictions and preferences. My son was diagnosed with a peanut and walnut allergy when he was a baby. When he was small, I remember going into ice cream shops and bakeries and leaving in tears because it was not safe for him to eat anything. My son is no longer allergic after years of immuno-therapy, but those memories stick with me and I want my bakery to be as inclusive as possible. I have friends with dairy allergies. I have friends who are vegan. There are people with egg allergies. So, I thought the easiest way to line up with what my heart wanted was to make everything vegan and to not use nuts in any of my products. As for food colorings, I won't use anything artificial in my items. This is because I know that there are individuals who cannot tolerate the chemicals in the fake stuff. Any sprinkles I use are the Supernatural brand.
Has the choice to use organic flours, mostly organic ingredients, vegan chocolate chips, vegan white chocolate chips, high quality cocoa powder, dye-free sprinkles, etc. been more expensive? YES. That's a loud yes. Of course it has. But, it's worth it.
I love the creativity Wild Doe has given me. I love coming up with new items and naming them. I also love providing you all with food that you can feel good about eating and sharing with your loved ones. I put a lot of thought and love into what do! I hope you can taste it!

a note on nuts: While I do not use nuts, there are some items that I sell that use ingredients that come from places where nuts are in the facility but nothing that I'm aware of is on shared equipment with nuts. The one item I can think of that this specifically applies to are the dates from the Truffles. The dates come from a facility where nuts are present, but are not on lines with nuts.
